Prepping Sweet Potatoes
To begin the prepping process for your sweet potatoes you need to give them a good scrub and a rinse with cold water. Remember to always use a sharp knife. Once cleaned, you can cube them, slice them or you can even turn them into noodles. There is absolutely no need to peel your potatoes. The skin on a sweet potato is a great source of fibre.
Cooking Sweet Potatoes
If you are cooking your sweet potato with the skin on, be sure to prick the skin. Thinner potatoes will cook faster. Sweet potatoes are great when you stuff them with feta and bacon. Sour cream and chives are also a great filling for your sweet potatoes. Serve roasted sweet potatoes with pork or fish. Alternatively, you can’t find a better vegetarian meal than a few hearty sweet potatoes grilled to perfection.
Mashed sweet potatoes are a wonderful accompaniment for any meal. Here’s a great tip: add a little fresh cream to your mash to take them to a whole new level. Remember to make the ideal mash, you need to boil the potatoes until they are tender throughout.
