Chocolate Cupcake Day is one of our favourite food days. It combines two of our favourite foods; chocolate and cake! This is definitely one that’s not to be missed. While we can collectively agree that the classic chocolate cupcake is delicious, there are a few really cool variation we cannot wait to try.

What makes a great Chocolate Cupcake?

We’ve had a chat with our bakers at Karaglen SuperSpar and they all agree that the perfect Chocolate Cupcake should be

  • Moist
  • Decadent
  • Frosted (else it will only be a muffin)

You don’t have to be a professional baker to perfectly nail a chocolate cupcake. Here’s a fool-proof recipe you can try for the best cupcakes:


  • 100g Flour
  • 50g unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 2 extra-large eggs
  • 100g white sugar
  • 100g brown sugar
  • 90ml oil
  • 100ml buttermilk


  1. Pre-heat oven to 170°C and place 24 cupcake liners in a baking tin.
  2. Whisk together the flour, baking powder, cocoa, salt and baking soda in a bowl and set aside.
  3. In a separate bowl mix together the eggs, sugar (both brown and white) and oil.
  4. Pour about half of the wet ingredients into the dry ingredients and add half of the buttermilk.
  5. Gently mix together until just combined.
  6. Add the remaining wet ingredients and mix again.
  7. Spoon the batter into the liners until each liner is about half-filled.
  8. Bake for 20 minutes and do the toothpick test. If the toothpick comes out clear remove your cupcakes from the oven and set aside to cool completely.
  9. For the frosting, mix a simple chocolate buttercream and frost those beauties however you like.

Getting Creative

If a simple chocolate cupcake won’t do it and you’re feeling a little more daring, you can always give any one of the following a bang. We promise you won’t be disappointed.

Tiramisu Cupcakes

Let’s just say, that Tiramisu has to be one of the best desserts ever created. Now, when you combine the deliciousness of a perfect tiramisu with an amazing chocolate cupcake, you cannot go wrong. As an added bonus, there’s no overnight wait to tuck into your stunning cupcakes. To make these use the recipe above for your cupcake base. And, don’t forget to grab a bottle of coffee liqueur. Now, liberally brush those un-iced cupcakes with the liqueur while they are still warm.

For the rest of the topping you’ll need:

  • 500g of Cream or Mascarpone cheese
  • ½ cup of Icing Sugar
  • 4 tsp vanilla essence
  • 500ml of whipped cream
  • Chocolate shavings

Topping Method

  1. Mix together cheese, vanilla and icing sugar and scoop the mixture into a piping bag.
  2. Put the whipped cream in a separate piping bag and refrigerate both until the cupcakes are completely cooled.
  3. Next, pipe the cheese mixture onto each cupcake and follow up with the whipped cream mixture over the cheese mix.
  4. Sprinkle shaved chocolate over the toppings and serve.

Rocky Road Cupcakes

We love chocolate and almonds and mini marshmallows! What would be better than combining the three as a topping for the most delicious chocolate cupcakes under the sun? Use the chocolate cupcake mix above or a box of cupcake mix for this one. Additionally, you’ll need the following for your frosting:

  • 1 cup of softened butter
  • 3 tsp vanilla essence
  • 2 tsp almond essence
  • ½ cup of cocoa powder
  • 3 tbsp milk
  • 4 cups of icing sugar
  • 1 cup of chocolate chips
  • ½ cup cream
  • Mini Marshmallows
  • Almonds

Icing Method

  1. Mix the butter until smooth and add in the vanilla and almond essence.
  2. To the mix add the cocoa powder and milk and mix until combined.
  3. Slowly add the icing sugar to the mix and combine.
  4. Scoop the icing mix into a piping bag and set aside
  5. In a separate bowl mix the chocolate chips and cream and heat in the microwave for a minute.
  6. Take out and stir until you have a creamy smooth chocolate ganache.
  7. Pipe the icing onto the cupcakes.
  8. Next, pour a little of the ganache over the topping.
  9. Finish off with a few nuts and mini marshmallows.

Chocolate Red Wine Cupcake

Wait! Did we just say chocolate and red wine? Yes, yes we did! Can life really get any better right now? These stunning cupcakes will be a hit at wine-o-clock. For this one, you’re going to adapt the actual cupcake mix given above. To the mix, you need to add, half a cup of red wine. Keep the rest of the bottle for wine-o-clock (there’s no need to waste wine). You’ll also need to add in a half a teaspoon of cinnamon.

Frosting Ingredients

  • 500g of Cream or Mascarpone cheese
  • ½ cup of Icing Sugar
  • 250ml of cream


  1. Mix together the cream, cheese and icing sugar until soft peaks form.
  2. Place mix into piping bags and rest in the fridge until your cupcakes have completely cooled.
  3. Pipe icing mix onto your cupcakes and serve.
