January is a notoriously tough time financially for many families. While it is difficult you need to know that you can still make awesome home-cooked meals. Here are a few of our favourite money-saving meals you can make in January.
Crispy Cheddar Chicken
Chicken schnitzels are always a winner. They are easy to make and one chicken breast can be divided into two. Crumb the chicken breasts with either store-bought or homemade crumbs. The Schnitzels can be served with a homemade white or cheddar cheese sauce and fresh veg.
Tuna and Macaroni Salad
Not only is this money saving meal perfect for those hot summer days, but it is also a great budget stretcher. One packet of macaroni can easily serve a family of four and then all you need to do is all some seasonal veggies, a little seasoning and a tin of tuna. Scoop a dollop of mayo in there are you have a meal!
Potatoes are so versatile! Most households have potatoes at the ready throughout the year which is why finding new ways to use them is always great. Potato hash browns are easy to make, filling and can be served with a number of veggies to give your family a well-rounded budget meal.
Pasta with Sausage
Gill up a few sausages and cut them up. Add the sausages to spaghetti and season with salt and pepper. Throw in a little stir-fry veg to add colour and serve. To save even more money, the spaghetti can be substituted with 2 minute noodles.
Tomato and Basil Omelette
Eggs are a staple in most households and this makes them a great addition to your budget saving dinner table. The perfect omelette is made with two eggs and a splash of water. Mix the two together but be careful to not over mix the eggs. Pour the mixture into a hot pan and wait for bubbles to rise to the top. Garnish with cheese or tomatoes and basil. Flip over the one side of the omelette and let is cook a little longer. Serve with a sauce or without and you have a winning budget meal.
Ham and Cheese Pinwheels
We think we may have had you at Cheese! These are super-efficient and light as a January dinner meal. Roll up cheese, ham and tomato and skewer with a sosatie stick. Cut up and serve. These are a child friendly meal option and a sure winner on those warm summer days.
