Summer is here and that means it’s time for delicious summer salad suppers. Summer is a great time to get your focus back on healthy family meals. And, after a long day at work on a hot day, no one really wants to eat a hot meal. Summer salad dinners are a great way to get the family around the dinner table for a light meal.

Here is our week of summer salad ideas:


Tuna Summer Salad

Approximate price – R150

Feeds – 4 people

You’ll need:

  • 1 can of Spar tuna
  • 2 cups of lightly cooked Freshline green beans
  • 3 cups of shell pasta
  • 1 punnet of cherry tomatoes (halved)
  • 1 small packet of olives
  • 3 boiled eggs cut into slices
  • 1 chopped yellow pepper
  • Baby spinach leaves


  1. Cook the pasta until al dente. Boil and shell the eggs. Cook the green beans until tender.
  2. In a large bowl empty the drained tuna and add the cherry tomatoes and olives.
  3. Next add in the pasta, yellow pepper, and green beans.
  4. Toss the ingredients together and top with boiled egg slices and baby spinach.
  5. Serve with Karaglen SuperSpar Village Bread.

Chicken Caesar Summer Salad

Approximate Price – R165

Feeds – 4 people

You’ll need:

  • 2 packets of simply chicken, chicken strips
  • 1 small purple cabbage (chopped or sliced)
  • packet lettuce leaves
  • 1 punnet mushrooms
  • large red apple (chopped or grated)
  • 4 tablespoons of sliced spring onion


  1. Bake the chicken strips according to instructions on the packaging and set aside to cool.
  2. Slightly brown the mushrooms with a little garlic and salt to taste.
  3. In a large bowl mix together the lettuce, purple cabbage, and apple.
  4. Add in the cooked chicken strips and mushrooms and toss everything together.
  5. Top off with sliced spring onion and serve with soft Karaglen SuperSpar rolls.

Mexican Taco Salad

Approximate price – R160

Feeds – 4 to 6 people

You’ll need:

  • 1 can of red kidney beans
  • 1 head of Freshline lettuce
  • 3 Freshline chopped tomatoes
  • 250g Spar sweetcorn
  • 1 party size bag of Doritos chips (flavour of choice)
  • 350g – 400g cooked and cubed Mexican style chicken breasts


  1. Marinade the chicken in a Mexican flavour fiesta mix (1 tablespoon garlic powder, 1 tablespoon paprika, 1 tablespoon chilli powder and 1 teaspoon of cumin) and 50ml oil for about 20minutes.
  2. Cook the chicken in a pan until done and set aside to cool.
  3. Pop the Spar sweetcorn in a microwave safe bowl and top with a tablespoon of butter. Microwave on high for 4 minutes. Take out and let cool.
  4. Shred the lettuce and add to a large bowl.
  5. Top with sweetcorn, drained beans and chopped tomatoes.
  6. Slightly crush the chips and add to the lettuce mixture.
  7. Toss the salad and add in the cooled chicken.
  8. Serve

Roasted Brinjal and Feta Summer Salad

Approximate price – R220

Feeds – 4 people

You’ll need:

  • 250g Brinjals sliced
  • 100ml Soy Sauce
  • 30ml Sesame Oil
  • 35ml Honey
  • 30ml Rice Wine
  • 150ml Veggie Stock
  • 4 tablespoons toasted Sesame seeds
  • 150g Feta Cheese
  • 1 large cucumber (roughly chopped)
  • 1 packet baby spinach
  • 3 Freshline tomatoes chopped
  • ½ lettuce head shredded.


  1. Make the Brinjals by toasting them on a hot pan in a little olive oil until slightly charred.
  2. Move on to roasting them by placing the Brinjals in a roasting dish.
  3. Mix together the Soy Sauce, Sesame Oil, Honey, Rice Wine, and Veggie Stock.
  4. Pour over the Brinjals and toss to make sure they’re completely covered.
  5. Roast for 25 minutes.
  6. Remove from oven and sprinkle over the sesame seeds then set aside.
  7. Add shredded lettuce, cucumber, baby spinach, and tomatoes to a large bowl and toss the salad until combined.
  8. Add in the Brinjals and feta cheese.
  9. Serve with Karaglen Village Bread.

Suggested Dressing – Sweet Balsamic Dressing


Sweetcorn Salad

Approximate price – R140

Feeds – 4 people

You’ll need:

  • 1kg sweetcorn
  • 2 chopped red onions
  • 1 cucumber finely chopped
  • 3 Freshline Tomatoes chopped
  • 1 red pepper (finely chopped)
  • 8 tablespoons of mayonnaise
  • 150ml Sour Cream
  • 200g Shredded Roast Chicken
  • ½ lettuce head finely chopped


  1. Cook the sweetcorn in the microwave with 2 tablespoons of butter for 5 to 6 minutes until tender yet firm. Set aside to cool.
  2. Caramelise the red onions in a frying pan with a little brown sugar. Let cool.
  3. In a large bowl add the chopped lettuce, cucumber, red pepper, and tomatoes. Toss to incorporate everything.
  4. Add in the shredded chicken and onion. Combine again.
  5. Then add in the cooled sweetcorn and mix again.
  6. In a separate bowl mix together the mayonnaise and sour cream and combine.
  7. Add to the salad and mix together until everything is covered.
  8. Serve.
